Banana Chocolate Chip Muffins

The throws of winter are upon us in Saskatchewan which means we’re spending much more time baking in the kitchen. One of our favourite recipes is banana chocolate chip muffins. Over the years, we’ve switched out sugar for honey in most of our baking. This recipe is no exception. If you’re in the neighbourhood, come on by and help yourself…they are still warm!

  • 3 bananas (mashed)

  • 1/4 cup vegetable oil

  • 1/4 cup milk

  • 1 egg

  • 1/3 cup honey (liquid or soft creamed)

  • 1 cup whole wheat flour

  • 3/4 cups white flour

  • 3 tsp baking powder

  • 1/2 tsp salt

  • 1 package mini chocolate chips

Mix everything together starting with the first ingredient and working your way down the list. Butter 12 muffin tins and bake for 15-17 min at 350 C. Let them sit in the tins for a few minutes before removing. Simple and easy. Enjoy!
